- Ageing: After hand harvest, the pre-chilled grapes were destemmed, gently crushed, and left to soak with their skins for 6 hours before pressing to extract the purest fruit aromas. After the fermentation in stainless steel tanks, 2/3 of the wines were aged in 500-liter French oak barrels, and 1/3 was aged in granite eggs and stainless-steel tanks. 5 months of ageing with regular battonage. 25% of the oak barrels were new.
